Free Range Chickens and Fresh Eggs
I never thought much about eggs before I had chickens. Now I marvel at the variety of colour and sizes. Who knew? ⠀

The little one had no yolk at all. Just albumen. The blue egg is from my neighbour Courtney who has Amauricana chickens. They’re also referred to as Easter Eggers. ⠀

I’m often asked why some chickens lay white eggs and some lay brown eggs. Typically brown chickens lay brown eggs. White chickens lay white eggs. But the ear lobe is actually a better indicator of egg colour. ⠀

All eggs are white on the inside of the shell because the primary component is calcium., and is the first layer to surround the yolk and albumen. Colour happens in the outer layers. ⠀

So what about the blue egg?? It has to to do with pigments in the chickens physiology. Blue eggs are blue throughout the shell, even on the inside!
There is no difference in nutrition though. Yummy no matter the colour!
