Lavender Honey Has Arrived!

Ta da!! Stonewell Farm has produced its first batch of Lavender Honey !! This years stellar honey harvest is delicious on its own, and we’ve added just a light hint of lavender for a novel taste. ⠀

It’s a lengthy process to make lavender honey. We use carefully cleaned culinary lavender buds in large jars which get turned upside down as many times a day as I walk by them. Lavender requires heat to release the flavour from the buds, so the jars are also put in a hot water bath several times a week. In total the process takes 3 weeks! Some people have asked if we use lavender oil in our honey and the answer is no. Lavender oil should not be consumed. It’s too strong a flavour in an essential oil form. ⠀
